Pina Colada Cheesecake

Bites Tale : May be i just don't have "jodoh" with this recipe!

Look at this cake!

Pretty?

But

It ended up in the garbage bin.

This is the 2nd time I tried to make this cake! I wanted to make it for my dad's birthday. Why is it so difficult? I’ve made lemon cheesecake and mango cheesecake before.. all turned out well.. but, but… making this Pina Colada Cheesecake is killing me!!!

I got the recipe from “Taste of Cold, Sweet Temptations" by Kelly Tang.. it’s supposed to work! I’ve made ice-creams and other cheesecakes from it.. but I just couldn’t make this..

So, I’m going to share this recipe with you (without my step-by-step photos in case i mislead you with the steps) :

Ingredients:

Coconut cookie crust base :

110g coconut cookies, crushed

60g unsalted butter, melted

Some canned pineapple, diced & cut into cubes

Filling :

A.

250g cream cheese, softened

200g sweetened condensed milk

1 tbsp lemon juice

1 tsp grated lemon rind

260g canned pineapple, drained & blended into puree

1/4 tsp pineapple essence

1 drop yellow colouring (i skip this)

B.

60ml canned pineapple syrup

1&1/2 tbsp gelatine powder

Method:

1. For coconut crust : combine coconut cookie crumbs, melted butter and press into a baking pan. Chill in fridge;

2. In a large mixing bowl, beat cream cheese and condensed milk until smooth. Add in remaining ingredient A and mix well;

3. Combine canned pineapple juice and gelatine powder. Double boil until gelatine powder dissolved. Pour into the mixture and mix well;

4. Sprinkle some diced pineapple onto the crust and pour over cheese filling. Chill for 3 hours or until firm.

If you are making this, please tell me what’s the result…

Please.. please... please...

Uptown Girl

Bites Tale : I had my haircut! feel so light now.. kekeke!

This is the 1st book I read written by Olivia Goldsmith. She is the author for “The First Wives Club”, if I remember correctly… there is a movie on this “TFWC” novel...so I guess she must be quite good… that’s why I decided to buy this book.

It didn’t disappoint me at all… it’s really fun reading… I brought it home and started reading after my dinner. I spend the next hours reading it and didn’t want to put it down until I finished the whole book. The story is full of gossip and it’s so “girl”, that is, if you know what I mean!!

Egg-in-a-Hole

Bites Tale : Go see "Egg-in-a-Basket" here

He bought me 2 recipe books from his trip to KL.

This is the 1st recipe i tried out from 1 of the recipe book, "Joy of Cooking", simply because it's the simplest to do.. kekeke.

I must say.. this is a very good book... it's more than 1000 pages of recipe + info, with more than 4000 recipes.. selling at RM145 at Kinokuniya KLCC, not sure whether we can find it in KK.. will try looking at Popular / Times bookstore.

Here's the recipe:

Ingredients:

2 slices of sandwich bread
30g butter
2 eggs

Method:

1. Cut a round hole out of the centre of the 2 slices sandwich bread (i used my sis's water bottle cap) ;

2. Melt the butter in a large frying pan over medium heat;

3. Add the bread slices and wait;

4. Crack 2 eggs into the holes and wait again;

5. Flip the bread and egg using a spatula, wait until the eggs are done to your likings;

6. Fry the leftover rounds of the breads;

7. Served.

It's so easy!

Pic : These are the books he bought for me.. the mandarin one is a "All-about-homemade-bread" book

Yogur Berry

Update : Yogur Berry outlet in City Mall is closed, but the Warisan Square outlet is still open for business.

Bites Tale : I need a hair cut!

Yogur berry is not something new in KK now, went to the outlet at Warisan Square a few times... a bit dissappointed as the portion are getting smaller.

My friend brought me and my sisters to the outlet at Citymall, i must say i won't be going to the outlet at Warisan Square anymore... but the staff at Citymall will start seeing me alot.. because they are generous in their serving... and their service are better too!

Look at the yogurt and the fruits!

Craving for it now?

Equatorial Restaurant

Bites Tale : My gastric came back... doc said i should not take spicy food and cold things for the moment.. i think the cause of the gastric is the wasabi at Umai.. that's the best wasabi i could find in all the Japanese restaurant i've been to... damn syok but my stomach can't stand.. sigh...

This is the 3rd time i've been to Equatorial Restaurant.

The 1st time was too salty... The 2nd was good..

And this time was so-so only... there's nothing to shout about except for the scallops and prawns... i was "longing" for their famous pork knuckle and the spinach with century egg that whole day.. but both disappoint me.. they were tasteless... my youngest sis just came back from KL that morning, and she was craving for bean curd... the captain introduced their specialty bean curd.. from the pic in the menu, it look some sort like the ones in Hong Kong Restaurant at Lintas Square.. my sis eyes sparkled when the bean curd came, took a bite and the sparks are gone.

Their specialty is Crocodile meat though... but none of us in my family dare to give it a try... so if you are the daring ones... go try... i have friends who said it's very nice...

This is what we ordered :-

Pic : Fish maw soup

Pic : Scallop

Pic : Deep fried pork knuckle

Pic : Specialty Bean Curd

Pic : Spinach + century eggs

Pic : Sweet & sour chicken with marinated jellyfish

Pic : 2-style prawns... thumbs up for this... the prawns are very big and fresh!

Hmm... i don't know what to say about this restaurant... it will be unfair for me to say they are not good and they don't worth the $$$ you spend there because some of the dishes they served are really good... may be it would be fairer for me to say... they deserved another try?
